The best thing about this is that it takes very little hands-on time, so anyone can do it. Use 5 vanilla beans for 8 ounces of unflavored vodka. Split the vanilla beans down the middle with a sharp knife, but leave them whole. Place the split beans in a resealable glass bottle and cover with vodka. Store the bottle out of direct light, and shake it weekly. Allow at least 6-8 weeks for the vodka to become vanilla extract, but the longer it sits the better!
