Rustic Fall Recipes to Warm You Up
Let’s start with a favorite {and easy} rustic fall recipe that really does warm you up. It’s perfect after a cool day working in the garden or raking up all those fall leaves. Get out your crock pot for this one!
Potato Cheese Soup
- 2 pound bag of frozen cubed hash browns
- 1/4 cup minced, dried onion
- 1 teaspoon garlic powder
- 2 teaspoons dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 5 chicken bouillon cubes
- 5 cups warm water
Put all ingredients into a 5-6 quart crock pot and stir to combine. Cover and cook on low for 4-5 hours.
At the end of the cooking time, use a potato masher to roughly mash some of the potatoes, according to how chunky you like it.
Add:
- 1 cup half and half, warmed
- 2 cups shredded medium cheddar cheese
Stir until cheese melts and serve with croutons, sour cream and chives if desired.
Casseroles or one-pan dinners that bake in your oven are perfect for those cool fall evenings. Here’s a potato and chicken dish your family will love. It practically screams Fall making it one of my favorite rustic fall recipes.
Herb Chicken & Potatoes
- 4 bone-in, skin on chicken breasts
- 2 pounds Yukon Gold potatoes, cut in wedges
- Fresh rosemary, peppercorns, garlic cloves
- Olive oil cooking spray
Preheat oven to 400 degrees F. Spray a 9×13 casserole dish with non-stick cooking spray.
Sprinkle chicken breasts with salt and pepper, and spray with cooking spray on all sides. Place in the casserole dish.
Spray prepared Yukon Gold potatoes with olive oil spray and season with salt and pepper. Add them to the dish, arranging wedges around the chicken breasts.
Add a few sprigs of fresh rosemary, garlic cloves and peppercorns to the dish.
Place in the oven and bake for 45-60 minutes, or until chicken registers 165 with an instant-read thermometer. Remove dish from the oven and allow the chicken to rest for 10 minutes before serving.
One of the more rustic foods you can make is a galette. A galette uses pie crust, but is free formed and folded around the filling instead of placed into a pie dish. They can also be made with either a sweet or a savory filling. Fall fruits such as apples and plums make delicious sweet desserts. This recipe is for a savory mushroom galette. Enjoy!
Mushroom Galette
Make your favorite pie dough, but substitute part of the butter for 3 tablespoons of ricotta cheese. This adds a delicious savory component to the crust.
Filling from Caroline’s Cooking:
- 1/2 onion, sliced in quarter rings
- 8 ounces of cremini mushrooms, sliced
- 4 ounces of Portobello mushrooms, sliced
- 1.5 tablespoons butter
- 1 tablespoon olive oil
- A clove of garlic
- 1/2 teaspoon thyme
- 3 tablespoons ricotta cheese
- 1 once Fontina cheese
Put butter and olive oil in a skillet and heat over medium heat until the butter melts. Add the onion and cook until translucent and beginning to caramelize. Add the mushrooms, garlic, and thyme. Cook until most of the liquid evaporates. Set aside.
Preheat the oven to 400 degrees F. Roll out the pastry dough. Brush with additional ricotta, leaving about an inch around the edges uncovered. Place the crust on a large cookie sheet. Pile the mushroom mixture in the middle of the dough. Fold up the edges around the outside, leaving a circle in the middle uncovered. Brush the pastry with an egg wash if desired, and sprinkle with shredded parmesan cheese.
Bake for 20-25 minutes, or until golden brown. It’s best served warm!
